I am thinking about some Memphis BBQ right now! My favorite joint to follow...

I had some of the best Ribs at BB Kings Blues Club.

Memphis as you know is home to the "dry rub" method of prep. Not sure about King's (too many years and too many joints later)[SUP]1[/SUP] I have forgotten, but many deliver the dry rub with a little vinegar at the bottom of the basket--and you choose the sauce from what is available on the table. Most places have at least three kinds.

It will be nice moving back to Knoxville in a couple of years--and we do the Nashville, Memphis, and Chattanooga jaunts again!
